Harder than you think. In addition to the above you'll have to satisfy the health department periodically that you're rotating stock, and that your product is fresh and clean within their guidelines. Your kitchen too, if you're producing your own. You'll also be wise or required to carry liability insurance in sufficient amount to cover any cases of food poisoning that may arise. You will have spoilage, which may be a significant expense if you pick a bad location for your machine, and you'll have maintenance and upkeep to pay on those machines as well.
In the beginning, do NOT pay someone to restock. That's YOUR job. Oh yes, you'll eventually need a cargo-hauler too.

The only advice I can give you is that your sandwiches need to have LARGE and clear "SELL BY" dates on them that can be seen while they are inside the machine.
I say this because we had a sandwich vending machine at work but nobody used it. Part of the problem was that although there were dates on the sandwiches, they were printed very small, and it wasn't clear whether the date was the last day you could eat it, or the first day you shouldn't.
